Katie's Birthday!

So this is my first and hopefully last blog post.

This Saturday is Katie's birthday (27, but you didn't hear that from me). Luckily she has tomorrow off so our weekend will be starting tonight. Katie has been pulling long hours at work lately so the extended weekend is needed for sure.

We of course have plenty of items on our wedding to-do list to accomplish this weekend, which for the most part should be fun items. To start the weekend off with a pleasant surprise I thought that I would provide Katie with her birthday dinner tonight.

For dinner we will be having ceviche (sometimes spelled seviche). A month or so ago we had ceviche for the first time at a Mexican restaurant and loved it. That in combination with the fact Katie is always bugging me to make seafood for dinner, which does not happen often due to my pickiness about quality and the cost, inspired me to make this dish. Ceviche is a fresh tasting seafood "salad" in which the seafood is marinated in citrus juice which "cooks" it without applying heat. The red snapper ceviche recipe is here. It will be served in some toasted tortilla bowls with tortilla chips.


For desert (Katie's favorite part) I stopped at crumbs and got some jumbo cupcakes. One is red velvet and the other is brownie, they will be amazing for sure! I had originally thought of making a cake but I think this solution will be better for both of our wedding diets, as we will have one bad night and not a week of bad eating.


I hope that Katie enjoys her birthday dinner and I am sure the weekend will be great if not only for the fact that it is forecast to be 85° and not 105° like last weekend.
